For dinner this delicious arugula salad with carrots, celery, tomatoes and cucumber; with salmon burger and as a dressing I used rice vinegar, sesame oil and a splash of low sodium soy sauce.

For the burger I used the kitchen helper and added 4 oz of salmon, onion, carrots, garlic, salt, pepper, and soy sauce.

For my snack today: 1 tbsp. peanut butter and 1 tbsp. strawberry jam both homemade, on a piece of protein bread @p28foods cut in half. 
For the homemade peanut butter: Set your oven at 350º F, on an oven safe trade put a cup of unsalted raw peanuts, let them brown for about 10 minutes (or less). Take them out of the oven and let them rest a little and then place them in a blender. Patiently blend the peanuts until they are creamy. To store, pour the peanut butter into a glass container and put in the fridge.

For the strawberry jam: place 1 cup of sliced strawberries in a pot, add a little water and start cooking until it turns into a jelly, add 1 tbsp. of honey and stir. Store in a glass container and let it cool before storing in the fridge. You can make this jam with your favorite fruits like: cranberries, blueberries and raspberries.
